L’Ecurie is authentic Valais incarnate, with a modern flair and taste for the extraordinary. You really can taste the mountains in every dish, even in the sole with cod roe, pictured above. Though fish aren’t the first thought when it comes to mountainous regions, the flavours surrounding it are true to Swiss culture. Though the real highlight of this restaurant, if you book ahead, is The Vault. This intimate seating area is the perfect backdrop to a magical moment in the mountains. Seating up to 16 guests with candlelight dining and vintage wines surrounding you on all sides, this is the place to experience L’Ecurie. Great for celebratory meals and corporate ski holidays, the privacy here is blissful!

Pan-seared foie gras is daringly paired with an orange-caramel sauce, and you can even sample a family recipe; coquillette pasta with smoked ham, and of course, cheeses from the Swiss mountains, infused with truffle throughout.
